White Chocolate Raspberry Pops

This warm weather has been been inspiring¬†ice cream-like recipes in my kitchen! I love ice cream pops in the summer and this is one of my favorites! I have plenty of “pop” recipes, summer good, summer not; but this one is a hands-down winner. These low carb ice cream pops are decedent and satisfying without any added sugar. The only sugar comes from the optional raspberries and a very small amount in the coconut butter. They get their white chocolate taste from the coconut butter. What type of candy is always late? Choco-late! This is such a fun ingredient and I have been playing around with it a lot lately. It adds a depth of flavor that you cannot find anywhere else. Just like peanut butter is ground peanuts, coconut butter is ground coconut. I think you will really enjoy these tangy and sweet treats!

What you will need:

1 can full fat coconut milk or coconut cream

1 scoop vanilla protein powder (mine is sweetened with stevia)

1/2 cup coconut butter

1/2 teaspoon vanilla extract

1/2 cup raspberries rasppop-ing

Blend everything but your raspberries. Fill your popsicle molds half way with your ice cream mixture. If you love my popsicle molds, you can pick up your own, here! Layer in your raspberries. Then, fill each mold to the top with your ice cream mixture. Pop these guys in the freezer for a few hours and enjoy!
