These low carb chocolate chip cookies are as wholesome as they are delicious. They are the perfect keto treat due to their high fat content and super low sugar content. What you will need: Makes 1 dozen cookies
1/3 cup coconut flour
1/4 cup butter at room temperature (You butter use grass fed!)
1/4 cup coconut oil (also at room temperature do it is soft)
1 teaspoon stevia extract
1/4 teaspoon salt (if you are using unsalted butter)
1 teaspoon pure vanilla extract
2 eggs (Organic, pasture-raised are egg-stra good!)
1/4 teaspoon baking powder
1/2 bar very dark chocolate (I used Lindt 99% cocoa)
Preheat your oven to 350 degrees. In a large mixing bowl, cream together coconut oil and butter. Add salt (if you are using unsalted butter), stevia, vanilla, eggs, and baking powder. Mix for about 30 seconds are until well combined. Add coconut flour and mix until dough forms. I used my electric hand mixer for this! Once your dough has formed, cut your chocolate into fine shreds and mix them into your dough. Form 12 cookies and place onto a Silpat or parchment paper lined baking sheet. Bake for 12 minutes. They should begin to turn golden but not quite brown. If they need more time, bake them for up to 15 minutes total. Remove, let cool, and enjoy!
