Red White & Blue Low Carb Microwave Cake

Happy 4th of July, everyone! The 4th is one of those holidays you cannot help but celebrate in one way or another. Whether it is simply hanging a flag, attempting to dress in patriotic colors, or enjoying your favorite fireworks display, this holiday tends to bring out the patriot in all of us. Though, my favorite patriots come from punsylvania. If you are celebrating the grain-free way, you should absolutely be making my Red, White & Blue Microwave Cake. This gluten free, super easy cake is perfect for one or to make for a crowd. Your guests can all have their own mini cake and top it however they like! This cake is so good, you and your friends will be doing an indepen-dance.

What you will need: Serves 2

1 tablespoon coconut oil

2 tablespoons milk of your choice (I used coconut milk but any will do!)

2 teaspoons fresh lemon juice

1/2 teaspoon lemon zest

1/2 teaspoon liquid OR 1/4 teaspoon powdered stevia extract + 1/4 teaspoon (either)

1/2 teaspoon baking powder

1 tablespoon coconut flour

1/2 tablespoon almond OR cashew flour

1/4 to 1/2 cup each frozen blueberries & frozen raspberries

1/4 cup coconut cream refrigerated

OPTIONAL: 1 teaspoon poppy seeds

In a medium size, microwavable bowl wipe your room-temperature coconut oil around the entire inside coating it evenly and completely. In a separate mixing bowl, mix all of your wet ingredients together (lemon juice, milk, egg). Add your dry ingredients to the bowl of wet ingredients (flours, 1/2 teaspoon stevia, baking powder, zest). Pour batter into your greased bowl and spread out evenly. Microwave for 1.5 minutes. Remove and allow to cool.

Pour your berries into 2 separate microwavable dishes and microwave together for a total of 2 minutes. They will make their own “sauce”.  Set aside. Whip your coconut cream and 1/4 teaspoon stevia together for about 20 seconds. Choose your favorite red or blue dish and plate your cake. Pour your raspberries on one side of the cake and blueberries on the other. Top with as much cream as you desire. Serve with your favorite liber-tea or Bulletproof Dairy-Free Frappuccino. Enjoy!
