One Ingredient Low Carb Rice

Chinese and Indian food without rice are just not right. Eating low carb has its perks but it often leaves something to be desired. Now, you can have your Chinese and eat it too because I have the most simple, one ingredient “rice” you will ever make. It is so easy and delicious, even you high carbers may switch over. Plus, it is a great way to add extra veggies to any meal. This cauliflower rice will be a new staple in your house once you give it a try.

What you will need:

1 part call her

1 part flower

But really:

1 head of fresh, beautiful cauliflower

You need to trim your cauliflower of any leaves and remove the stem so that you are left with florets. Wash your cauliflower. Grate the entire head. I used my Cuisinart Food Processor to make my life easier but you can hand grate it as well, you just may be there for a while.

Transfer your grate cauliflower into a microwave safe dish and cover with saran. Microwave for 5 minutes. Stir. And pleeease be careful, there will be steam and it will be hot. Recover and microwave for another 3-5 minutes until the cauliflower is soft or to the desired consistency. Serve with your favorite dish! I love serving mine with my Low Carb Chicken Francese or with stir fry.
