Have you ever thought of what would happen if a girl scout and Ben and Jerry made a love child? Well, that love child happens to be health conscious, creamy, and delicious. It is my Mint Chocolate Chip Smoothie and it was mint to be. This decadent smoothie has everything you could want in a tasty dessert (heck, I eat it for breakfast) without all the gunk. This smoothie is about as low carb as they come while satisfying your sweet tooth and your stomach. Here’s what you will need:
Greens: a lot of ‘em. I used about a cup of baby spinach, 3 collard green leaves, 3 stalks of kale, and 3-5 dandelion leaves. All organic!
8 oz. ice water (with 5-8 ice cubes)
6 oz. milk of your choice (I used fresh, raw cow’s milk)
1/2 of an avocado
1/8 tsp. peppermint extract
1 scoop (about 1/4 cup) vanilla protein powder (I use grass fed whey sweetened with stevia)
If you are using a high speed blender, such as a Vitamix or a Blendtec, just toss everybody in and blend! If you’d love to have a Vitamix in your kitchen, you can pick one up here! If not, blend your greens and liquids first, then add everyone else to the party. This just helps the greens to break down. If you would like your entire smoothie to taste chocolaty, add the cocao nibs to the smoothie itself. If you would rather have a chocolate chip smoothie, sprinkle them on top!
Tip: Freeze any leftovers. It keeps the smoothie fresh and thaws wonderfully whether you’re coming back for seconds later or in a couple of days.
This makes one very large smoothie or a couple of still satisfying, but a bit smaller smoothies. Once you try this smoothie, you will never look at greens the same way. I honestly never thought greens could be so tasty!
