Memorial Day Parfait

The unofficial start of summer is here and I know I cannot be more excited about it. With summer comes treats! We all want something cool and refreshing on a hot summer day but for us low carbers, ice cream is out of the questions. Try making some of these patriotic and delicious parfaits instead! They are low carb, gluten and grain free. I wanted to develop a granola that gives the crunch to a parfait without giving it loads of sugar. I think I was successful but, you’ll have to let me know!

What you will need (serves 2):

1 cup yogurt (I used greek 2% but any plain yogurt will do)

1 cut shredded, dried coconut

1/4 cup slivered almonds (because sometimes you feel like a nut)

1 1/2 cups frozen raspberries

Vanilla liquid stevia drops

Sea salt

Preheat your oven to 350 degrees. Toss you frozen berries into a skillet over medium heat. Stir every couple of minutes. They will begin to break down and form a sauce. This stuff is my jam. Once they have broken down and begin to look “liquidy” turn your heat down to low and let them hang out.

In the meantime, toss your coconut and almonds in a half vile of liquid stevia (about a 1/2 teaspoon) and a pinch of salt.  Lay them evenly on a baking sheet and place them in the oven. Toss them every 5 minutes for 15 minutes. Though, keep a close eye on them for the last 5 minutes checking your mixture every minutes. Coconut is very fatty so it burns easily. It is finished when your coconut is a light golden brown. Take out of the oven and allow to cool. At the point, take your raspberries off of the heat and allow them to cool.

Mix 1 cup of yogurt with a half vile of liquid stevia. Once your granola and berries have cooled, you may begin to layer your parfaits! I like to put mine in pretty glasses like these!


This recipe works well with any berries! Just cook them the same way. This makes the perfect treat, dessert or snack for kids, they love building their own parfaits! I hope you all enjoy this recipe and let me know if you make your own parfaits!
