A Snickerdoodle is not a designer dog breed, but rather an amazing, buttery cookie sprinkled with cinnamon. If you have done your low carb research, you probably know that high carb and high sugar do not mix. By making easy swaps for wheat flour and sugar and adding protein, I have made Snickerdoodles an amazing low carb, protein packed snack! They are the perfect pre or post workout treat or a tool to kill a sweet tooth. The grass-fed whey protein powder I use can be purchased from True Nutrition in tons of flavors. What you will need:
2 tablespoons butter at room temperature (I prefer Kerry Gold)
1/2 cup vanilla whey protein powder (mine is grass-fed and sweetened with stevia)
1 tablespoon almond flour
1 tablespoon coconut flour
1/2 teaspoon baking powder
1 tablespoon milk of your choice (I used unsweetened almond milk)
1 teaspoon cinnamon
1 teaspoon powdered stevia extract
Preheat your oven to 350 degrees. Using either a hand mixer, stand mixer, or whisk, combine all of your wet ingredients (egg, milk, and butter). Once these are combined, add whey, almond flour, coconut flour, and baking powder. Mix until well combined. You will be left with a very sticky, wet dough. What do cookies sleep with at night? A cookie sheet! Line one with a silpat or parchment paper. “Plop” your dough onto your cookie sheet. You will have between 6-8 cookies. Combine stevia extract and cinnamon; sprinkle a bit of the mixture on top of each cookie. Bake cookies for 8-10 minutes. Enjoy!
