The Pumpkin Spice Latte, or the PSL as fans call it, has a cult following. People covet this drink and I know why, its delicious! It takes Fall, my favorite season, and puts it in a cup. Every sip reminds you of spicy pumpkin pie. However, it packs more sugar than a piece of real pumpkin pie. Coming in at around 50 grams of sugar for a grande, the Pumpkin Spice Latte is not only Fall in a cup, its an insulin spike in a cup. It is also loaded with a latte crap; including artificial flavors and not a drop of real pumpkin. Being a PSL lover myself, I had to find an alternative. Enjoy all of the pumpkin spice goodness without sending your blood sugar through the roof with my version of Starbucks’ Pumpkin Spice Latte. My version also happen to be vegan so everyone can savor my PSL.
What you will need: Makes about a quart of creamer
1 can coconut cream or full fat coconut milk
2 cups milk (I used unsweetened vanilla almond milk but any milk will work)
1 cup pumpkin puree
2 tablespoons vanilla extract
2 tablespoons pumpkin pie spice
1/4-1/2 teaspoon stevia extract (depending on your taste)
Add all of your ingredients to a heavy bottomed pot over medium heat. Whisk them together and cook for 20 minutes. This is so the pumpkin cooks and you do not have a raw pumpkin taste in your coffee. After twenty minutes, take your creamer off of the heat and allow to cool. Using either your blender or a hand immersion blender, blend your cream until velvety smooth in texture, about 1-3 minutes. Transfer to a large mason jar or other airtight containers for storage. This will be your creamer.
To make cinnamon coffee you need:
1/4 cup of medium ground coffee
1 teaspoon ground cinnamon
Obviously, you can brew your coffee however you choose. This is just how I prefer to make mine! I use a French Press and add my coffee along with ground cinnamon to flavor the coffee naturally. Then, pour boiling water over the coffee and allow to steep for 3-6 minutes.
To make your latte, add 1/3 cup cream to your favorite mug along with a cup of coffee. Top with whipped cream, coconut cream, or a sprinkle of cinnamon! Enjoy the pum-king of low carb lattes!
