My friend Mary, from the fabulous MaryWereden.com, happens to be a very impressive mixologist. We though it would be fun to pair my cooking skills with her cocktail genius and create the perfect Happy Hour pairing. I brought Low Carb Jalapeno Poppers to the table and she created the most delicious Low Carb Margarita you could ever ask for. The two together are like taking a mini vacay to Mexico. What you will need for Low Carb Jalapeno Poppers: 24 poppers
1 cup shredded sharp cheddar cheese
1 block (8 oz) cream cheese at room temperature
1 teaspoon granulated garlic
1 teaspoon dried onion
Preheat your oven to 375 degrees. Begin by slicing each jalapeno in half lengthwise and scooping out the ribs and the seeds. In a large mixing bowl, beat together all of the remaining ingredients. I used my electric hand mixer for this step. Then, fill each jalapeno half with your cheese mixer. This is where this recipe begins to come to cheddar! Finally, pop those in the oven for 20-25 minutes until they are golden brown and the peppers are soft.
