When I decide I am in the mood for eggs I often have a dilemma. I really enjoy omelettes and love that you can bulk them up with tons of veggies. However, when I do not have a gooey yolk to eat, I somehow feel like I am getting gypped. So, I came up with the Lazy Omelette; it is the best of both worlds. You get all the veggies of an omelette with the oozing yolks of a sunny side up egg. Plus, it is eggcredibly easy to make! It is rather eggciting if I do say so myself.
What you will need: Serves 2
1 tablespoon grass fed butter
1 bell pepper
1 small red onion (or half of a large)
3 cups baby spinach
Optional: sea salt
Heat a cast iron skillet over medium-high heat. Add 1 tablespoon of butter. Chop your onion and bell pepper finely and add to pan. Salt the vegetables lightly. Saute until your onion softens. Add spinach and saute until it had wilted. Crack one egg into each corner of the pan and cover. Allow to cook until the whites have cooked through completely and the yolks are as desire (about 5-7 minutes). Top with avocado slices and serve! This dish is also excellent served with fresh salsa!
