I have to admit, I have a weakness for Chocolate Covered Strawberries. I always have. If I had my option of desserts, Chocolate Covered Strawberries win over cakes, cookies, you name it. Though, many are made nowadays with hydrogenated oils and tons of sugar. I came up with a recipe that allows you to indulge in a decadent desserts and actually enjoy it knowing you are doing good for your body. These are so good, people may steal them from your fridge; and that would be a st-robbery.
What you will need:
About 20 ripe strawberries (preferably organic)
1 cup coconut oil
3/4 cup cocoa powder
1 teaspoon stevia extract
Heat your coconut oil over a double boiler. I do this so the oil melts slowly and does not get too hot. Once that has melted, you need to mix your cocoa powder, stevia, and oil together. It is best to use either a food processor or blender to do this so that it is very well incorporated. Pour your “chocolate” into a bowl.
Lay out either a silpat, parchment, or wax paper onto a large cookie sheet. Wash and dry all of your strawberries. Do not worry about the size of your berries! They all work. Plus the little ones are sad because their parents are in a jam. Dip each strawberry into your chocolate mixture then lay it on your covered cookie sheet. Once you have dipped all of your berries, place them in either the freezer (for 3 minutes) or refrigerator (for five minutes). Once they have hardened, removed your berries and dip them one more time. If you are adding your optional toppings, do so after the second dip! Sprinkle them with a little bit of sea salt, sprinkle crushed walnuts oven them, or get creative! Place them back into the refrigerator or freezer for another few minutes until they have hardened. Serve right away or store in the refrigerator for later! Finally, eat chocolate without feeling guilty. After all, a balanced diet is one that includes chocolate in each hand.
