I can honestly say I have never met a soul that hates pizza. When you ask a kid what their favorite food is, nine times out of ten their answer is, “pizza.” I have come up with a way to eat pizza literally everyday if you wanted to and that is to simply dress up a chicken breast like a piece of pizza. You still get the satisfying gooey cheese and tangy sauce without the carb induced coma. This recipe has a pizza my heart thanks to its versatility and it being down right delicious.
What you will need: Serves 4
2 large chicken breasts
1 cup marinara or pizza sauce (no sugar added)
1 cup shredded cheese (mozzarella, cheddar, or parmesan)
Your favorite pizza toppings
Preheat your oven to 350 degrees. Cut each chicken breast in half lengthwise so that you are left with four chicken breast cutlets. Take one cutlet at a time and cover it with plastic wrap. Using a meat tenderizer, gently pound out your chicken breast until it is about half an inch think. Do this to all four. Place your cutlets on a baking sheet that is covered in a silpat or aluminum foil. Bake at 350 for ten minutes. Remove your cutlets and top with marinara, cheese, toppings, and then a little more cheese. Did you hear the joke about pizza? I would tell you but it’s too cheesy. This is a great time to get the kiddos involved! We all know they love “make-your-own” anything so let them top their Chicken Breast Pizza how they like! And for the dogs, pup-eroni it is. Pop your chicken back in the oven at 350 degrees for 6 minutes and then turn on your broiler and let them brown (about 4 minutes). Let cool and enjoy your protein packed piece of pizza!
