Whether you are looking for an appetizer to serve during the big game or you just want to spice up your weeknight meals, this recipe will be a sure fire hit (and not just because it brings the heat). Boneless buffalo wings are amazing! How could you not love a spicy, fried piece of chicken paired with cool ranch dressing? However, the boneless wings we love to order at restaurants are more flour than chicken and that is no bueno when you’re eating low carb. My buffalo chicken bites with homemade ranch dressing will allow you to eat low carb while still enjoy the amazing “breaded” and “fried” chicken that we all crave.
For the Buffalo Chicken Bites you will need:
2 lbs boneless, skinless chicken breast or thighs
2 tablespoons coconut flour
1 cup almond or cashew meal
1/4 cup coconut oil
1 tablespoon water
4 tablespoons butter
1/2 cup hot sauce
salt and pepper
Preheat your oven to 350 degrees. Put your coconut flour, egg, and nut meal into 3 shallow dishes. Season your coconut flour generously with salt and pepper. Add 1 tablespoon of water to your egg and beat it to combine the yolk and the white. No yolk, this will help your flour stick to your chicken! Cut your chicken into 1 inch cubes. (Aren’t egg puns eggscruciating?)Do your best to cut them evenly so they cook uniformly and you are not left with any raw pieces; unless you don’t give a cluck about eating raw chicken! Dredge each piece of chicken first in the coconut flour, then the egg wash, then your nut meal. Place onto a baking sheet. You will want to line your baking sheet. I used a Silpat to line mine for this recipe. Brush each bite with melted coconut oil. Pop your bites into the oven for 15-20 minutes or until they are cooked through and golden brown.
While your chicken is baking, go ahead and make your buffalo sauce. Simply melt 4 tablespoons of butter over low heat. You butter not let it burn! Turn of the heat and stir in your favorite hot sauce. Make sure not to spill your hot sauce or you’ll be left with a hot mess. Pour your buffalo sauce into a large bowl so that you can toss your chicken in it when it is done!
After your chicken has baked, take it out of the oven and let it cool. This will help to ensure the “breading” sticks to the chicken. After about 10 minutes, toss your chicken in your buffalo sauce!
This recipe will serve 4 for a meal or makes a great appetizer!
For the Homemade Ranch Dressing, you will need:
Either 1 cup plain yogurt OR 1/2 sour cream and 1/2 cup mayonnaise
1 tablespoon each: fresh dill, parsley, and green onions OR chives
1 clove of garlic finely minced
1/4 teaspoon paprika
1/8 teaspoon cayenne (optional)
1 tablespoon vinegar
Simply add all of the ingredients together and you have homemade ranch dressing! I like using full-fat raw milk yogurt for this recipe. It gives it a tang you do not get from anything else. However, it taste more like “ranch” that you would purchase if you use mayonnaise and sour cream.
Drizzle your dressing over your chicken bites or serve along side with celery!
